It was 2,174 miles. That's how far Kristin Carman trekked after deciding she wanted to do something different—something more in touch with people—after years in the corporate world. So she thru-hiked the Appalachian Trail, using the time outdoors to get back to basics, appreciate nature, and gain a new perspective.
Only after she completed the journey did she learn of her gluten intolerance. And so began her next journey, developing a gluten-free pizza dough so she could continue to enjoy her favorite food. Following years of kitchen testing—maybe not 2,174 variations, but it sure seemed like that many—Kristin finally had a worthy dough: thin, flavorful, and crispy on the outside, soft and chewy on the inside.
So began Etalia Foods. Today, Etalia offers Kristin's Pizza Dough along with Rustic Boules and Ciabatta Rolls—all made with a signature dough recipe using natural and organic ingredients.
